In the May 2021 edition of the Knoxville Bar Association’s DICTA Publication, Melissa Carrasco explains the origin story of the familiar Lays’ potato chips. Herman W. Lay forged a partnership with Ed and Bernice Johnson, who were owners of the gas station across the street from his warehouse. Their mutual dedication and ingenuity led the company to its major success even in the midst of the Great Depression.
